Beef Stroganoff is a dish of finely cut beef in a sour cream sauce. The name is a combination of the French word ‘bœuf’ (‘beef’) and the surname of Count Stroganov, whose chef in the 19th century is credited with its invention. Through Russian cuisine, the word entered the world (English: ‘Beef Stroganoff’, French: ‘Bœuf Stroganoff’, German: ‘Stroganow’) and became one of the gastronomic symbols of Russia abroad.
